These Hawaiian chicken kebabs are the perfect summer recipe! Grilled veggies and chicken are marinated in a simple Hawaiian inspired sauce for a delicious quick dinner!

Serve these easy skewers with some coconut rice or on pita for a quick dinner recipe everyone will love. Dont forget the tzatziki!

Why We Love It

Three reasons: the marinade, the marinade, the marinade. This recipe is simple, but we use the marinade recipe for stir fries, on chicken breast, any time we need something easy.

Ok there’s a second reason – it’s SO make ahead. Like any skewer recipe, you can prep it ahead and keep them in the fridge until guests are here 10 minutes on the grill and dinner is served!

These kebabs are a family favoirte. The marinating time makes these a simple make ahead dinner that can be thrown on the grill once after school activities are done. Serve these next to Coconut Rice for a patio dinner that the neighbors will want to visit for!

Tips and Substitutions For A Perfect Skewer Night

  • Marinate, marinate marinate! Marinating will ensure any veggies or proteins you add have a similar flavor, whether you find artichokes in the back of your fridge or you want to add fresh crab!
  • Use up your fridge: the main part of hawaiian skewers, use what’s in the fridge. They’re so versatile, whether it’s edamame, tofu, bok choi, or prawns, linguini, and the color red, these are going to help clear out what’s left in your fridge to help you stay caught up and meal prep like a boss.
  • Rice turns a night of entertaining into meal prep. If you want to have dinners for the week, make what you have and serve over rice for the week. It’s a simple make ahead way to use what you have.
  • Cook ahead. Make your marinade, prep the skewers, then head to work. This is a recipe that gives you a 15 minute window for dinner being ready if you need to entertain last minute. We keep skewers frozen with Air Fryer Turkey Breast, Crispy Parmesan Roasted Potatoes, and Brussels Sprouts, for dinner emergencies. Once prepped, they’re pretty easy to keep on hand for last minute moments!

Hawaiian Chicken Kebabs

Ingredients

For The Marinade:

  • 4 Tablespoons soy sauce standard, not dark
  • â…“ cup pineapple juice
  • 2 teaspoons worchestershire
  • ¼ cup brown sugar dark
  • 2 cloves garlic grated
  • 1 Tablespoon ginger grated

For The Skewers

  • 1 lb chicken breast boneless, skinless
  • 1 red onion
  • 2 bell peppers
  • 1 cup white mushrooms halved

Instructions

Marinate

  • Combine marinade ingredients. Add salt and pepper, chili flakes to taste.
  • Add to freezer bag along with prepared ingredients.
    Marinate 30 minutes to overnight.

On The Stove:

  • Heat a cast iron or nonstick pan with olive oil over medium high heat.
  • Once oil is hot, add skewers to pan.
  • Cook, continuing to turn. Allow time for sides to sear and brown while cooking, don't turn too quickly.
  • Once meat comes to tempertature, allow to rest for 5 minutes before serving.

On The Grill:

  • Preheat grill to medium high heat. Brush grills with olive oil to grease.
  • Add skewers to grill. Cook for 5-6 minutes. Once skewers begin to release, reduce heat to medium.
  • Cook on medium heat, rotating often until internal temperature is reached. Rest for 5-6 minutes before serving.

Air Fryer:

  • Preheat air fryer to 400°F.
  • Cook skewers until chicken has internal temperature of 165°F. Allow to rest for 5 minutes before serving.

Notes

Skewer Tips:
  • Soaking skewers will prevent burning.
  • When making veggie skewers, match the cooking times to what is being skewered. Onions and peppers take 7 minutes, but mushrooms and feta cheese take 3-4.
  • Long skewers work better for entertaining. Don't use small charcuterie skewers.
Our best variations:
  • Add 1 Tablespoon of peanut butter for a spicy peanut sauce marinade. or
  • Add rice pilaf or coconut rice for a dinner to impress. We do this one for our meal prep too!
Cooking Tips:
  • Do not reuse marinade for additional ingredients. Cross contamination is very easy when making skewers, so if hoping to add additional marinade onto skewers double recipe and brush on during cooking.
  • If you're entertaining, make some skewers that are just meat, and just vegetables. These can help avoid allergies, keep some from overcooking, and ensure you have some fresh skewers ready to be added to the dinner in an emergency.
  • Always soak the skewers. I am the laziest cook ever, and I will always soak skewers after seeing the difference.
  • ALWAYS PREHEAT. Especially cooking in a pan, oven, or anything other than a grill, if you don't preheat you're not going to get a blackened grilled flavor to dinner and it'll seem silly. Heat your pan, heat your oil, and marinate properly.
