2tablespoonsparsleyfresh, chopped
Seasoning:
1teaspoongarlic powder
½teaspoonpaprika
1teaspoonItalian seasoning
½teaspoonsalt and peppereach
¼teaspooncayenne pepper
Instructions
Preheat oven to 425°F. Wash and peel sweet potatoes.
Combine seasoning ingredients. Set aside
Cut a thin strip off sweet potato to give it a base, then slice into ½" discs. Dice discs into cubes.
Add sweet potato cubes to a large baking sheet. Drizzle with olive oil, and toss to coat. Sprinkle with seasoning mixture, and toss again to coat evenly.
Roast for 30-35 minutes or until sweet potatoes are fork tender with a crisp exterior.
Garnish with fresh parsley.
Notes
For unseasoned roasted sweet potatoes, roast as above but just add salt and pepper to taste.
